Homage to the spoon: the menu paired with Rutini Wines at Roux Bistró

From Monday, July 29th to Saturday, August 3rd, Roux Bistró offers a menu paired with Rutini Wines.
Opportunity to treat yourself to two tastes.

Few restaurants have a well-deserved reputation for subtlety and attention to detail like Roux Bistró, the delicious corner of Recoleta masterfully run by chef Martín Rebaudino.
The reason is obvious to those who visit it: delicate dishes, with the best products and, above all, good taste.
Therefore, this new menu of Roux Bistró & Rutini Wines is a golden opportunity to pair Rebaudino’s cuisine with Mariano di Paola‘s oenology.
And just as the dishes chosen are a “tribute to the spoon”, the wines are also a tribute selection.
In particular the new Rutini Rosé de Malbec 2018which has just been released and opens the menu as an aperitif.
The wine is 100% Malbec from Uco Valley and is made with a light aging in 500-liter French oak barrels.
With a delicate coppery hue to the eye, it offers abundant floral notes reminiscent of jasmine, as well as a subtle hint of coconut from the aging; on the palate it is dry, with a lively and distinguished attack, which reverberates with a fair acidity and a trace of cherry on the finish.
The pairing?
Rebaudino suggests a soup of Jujuy pea soup with grilled Santa Cruz prawns and garlic emulsion.
But this is just the beginning. The starter is an artichoke stew from La Plata with 65º C free-range egg, shavings of Parma ham and slices of pecorino cheese from Lunlunta (Province of Mendoza), served with a glass of Rutini Apartado Gran Chardonnaya specialty of the winery with fruity aromas, ample and refreshing palate.
Now, for the main course, the spoon gains depth with a creamy yellow polenta, with stewed pigeon from Santa Rosa (Province of La Pampa) and tomatoes from San Rafael (Province of Mendoza).
Now the pairing is a red wine: Rutini Single Vineyard Cabernet Francwith intense fruity and herbal aromas, so that the palate gains volume and stretches the flavor for a long time, with a rich fruity aftertaste.
Dessert? a chocolate soup with ellendale mandarin sorbet and crispy rice noodles.
As with any self-respecting winter menu, the closing is with Rutini Encabezado de Malbeca port-like red wine that adds a contrast of flavor and texture to the chocolate, like a rich, fiery treat.
And to carry the spirit of the evening in the body, between Rebaudino’s cuisine and the wines of the winery, we could not miss a glass of Rutini distilled from Malbec marc, let’s say a grappa.a grappa.
