Famous for being one of the most widely planted and well-known varieties in the world, the Cabernet Sauvignon grape originates from the southwest of France: the Aquitaine region, which borders the Atlantic Ocean to the west and Spain to the south, is the cradle of this grape variety, as delicious as it is versatile when it comes to adapting to different terroirs. According to carbon-14 and DNA studies, this variety is the product of a natural botanical mutation that occurred sometime in the 18th century.
According to science, this natural phenomenon took place between a red grape variety -Cabernet Franc- and a white one -Sauvignon Blanc. This is why its resultant, the Cabernet Sauvignon grape, receives this denomination, inheriting the qualities of those that gave it origin. We can find it not only in varietal wines, but also in the most classic Argentinean blend, together with Merlot and Malbec. In France, however, the Cabernet Sauvignon, Merlot and Malbec triad loses its last member, as it is more common there to make blends that combine only the first two varieties.
With an intense ruby red color and a rough tannic structure, the wines made with Cabernet Sauvignon grapes are characterized by aromatic descriptors such as menthol, bell pepper, blackberries and red or black fruits, depending on personal perception.
It has an aftertaste of great length, and that sensory memory has hints of black olive.
