International Cheese Day is celebrated on March 27th.The history of this food, as versatile as it is adored, has been with us since time immemorial.
It is difficult to know exactly its origin, but there seems to be agreement in locating it from the sedentarization of human beings, who found
a method of food preservation based on milk coagulated and fermented in a probably fortuitous wayThe meat was then transferred and subjected to high temperatures in that attempt.
From then on, this noble and exquisite product accompanied the gastronomic history of mankind.

So celebrating it is not at all out of place and can be a very valid excuse to enjoy the unbeatable combination of cheese and wine, both products with tradition and with a variety that invites you to taste.

But, how to match cheese and wine in the right way? To follow any of the criteria to create combinations, you can think about the variety of cheeses according to the milk used for its production (beef, sheep, goat or buffalo), to the process used for its production, to the texture of the resulting paste (hard, semi-hard, soft) or to al type of maturation and others, and to seek to harmonize or achieve interesting contrasts according to the variety, acidity and wine structure that can accompany them.

Trumpeter Reserve Torrontés 2021A white cheese that combines very well with soft cow’s cheeses that are consumed fresh, such as Brie or Mozarella, which may well be buffalo, distinguished by its whiteness and its very slightly sweetened flavor.
Its citrus and floral notes go very well with the softness of these cheeses.

Rutini Malbec Rosé Collection 2021This wine, with six months in oak barrels, which gives it an atypical structure for a rosé, is an ideal wine to accompany fresh or semi-hard goat cheeses, such as Lusignan or Feta.
Because of its vivacity, it also goes very well with semi-hard sheep cheeses such as Manchego or Pecorino.
The first acatons to red fruits (cerealza) round off the palate, followed by an elegant fresh acidity and acIt has a soft and smooth taste with some saline hints.
To enjoy it to the maximum, it is suggested to serve it at a temperature between 10° and 12° C and to keep it in a cooler.

The Apartado Gran Blend 2015 is a great wine to pair with hard cow cheeses such as Sardo or Parmesan.
It can also be enjoyed perfectly with a mature Cheddar, a Provolone or a Reggianito, as it is a complex and intense red with a fruity frame and oak notes from its 24 months of barrel aging.
