It was 1631, and the answer satisfied the prime minister of Louis XIII: he would have his own red wine, similar to the one he had just tasted and had surprised him so much.
Armand Jean du Plessis, Cardinal and Duke of Richelieu and Fronsac ordered a dozen plants to be sent to the manager of his vineyard, from which fruits were born and from which he produced a brilliant, memorable and unique red wine of extraordinary quality. Successive research has shown that Cabernet Franc is, in fact, the ancient grape variety known as Balisca (1st century A.D.), cultivated on the Adriatic coasts, under the name of Romanafor the Spanish vineyard, and already implanted in Bordeaux soil, first called Biturica and then, Vidur.
Its primary aromatic precursors are usually raspberry, cassis, cherry, violets and menthol.
It is agile on the palate and has an elegant, fluid and versatile style for pairing with a wide range of ingredients, textures and foods.
