The following is the attractive menu that will be prepared:
Amuse bouche
MARKET INFLATED
Infladita stuffed with beer-flavored picaña barbacoa with guajillo chiles and cooked with
maguey served with salsa borracha and aged cheese.
Second step
KIDNEY TOMATO CREAM
Kidney tomato cream confit accompanied by huauzontle arancini and cheese of
goat, breaded with amaranth.
Third step
TIKIN XIC YUCATECAN
Grilled catch of the day with Yucatecan achiote, colored bell peppers, purple onion served with aracinnis de hoja santa and black bean puree.
Fourth step
CHICATANA ANT MOLE
Chuck flat braised with red wine served with mole de hormiga chicatana, accompanied by berry beans cooked with rabbit leaf, tatemada cambray onion.
Fifth step
RICE PUDDING
Rice pudding mousse served with cinnamon crumble and red fruit snow.
The wines that will accompany each step will be Chardonnay Estate, Dominio Malbec and the sparkling wine Dominio Extra Brut.
