Recipe: Mushroom soup with poached egg, pairing with Dominio Blend

Juliana’s mushroom soup with poached egg is a dish that celebrates the organic, the earthy and the artisanal. A combination of fresh and dried mushrooms, enriched with white wine and vegetable stock, transforms into a preparation with a deep and lingering umami flavor. The poached egg, added just before serving, adds a creamy and unctuous note that rounds the whole.

Here is the recipe:
MUSHROOM SOUP WITH POACHED EGG
Ingredients: for 6 persons
- 1 onion in julienne
- 2 peeled garlic cloves
- 1 kg of fresh mushroom mix (portobello, sunflower mushroom, paris mushroom)
- 30 grams of dried mushrooms (previously hydrated in broth)
- 1 lt vegetable broth
- 1 cup white wine
- Salt and pepper
- 6 eggs
Preparation:
- Peel the onion, garlic cut into slices.
- In a saucepan brown with a little olive oil.
- Then add all the mushrooms and cook for a few more minutes.
- Deglaze with 1 cup of white wine, let evaporate for a few minutes.
- Finally, add broth to cover, salt and pepper and cook.
- Serve the soup with a poached egg in each bowl.
For the poached eggs:
- Place water in a saucepan with a splash of white vinegar. Bring to a boil, break an egg in a separate bowl, bring to the pot with boiling water and cook for 5 minutes.
- Remove and dry in a cloth, reserve until the last moment.
