What is the Roll Fermentor and why is it key to a high quality wine?

The Roll Fermentor is a tool used in winemaking, more precisely during the fermentation stage.
The invention was the responsibility of Mariano Di Paola
Rutini’s Winemaking Director – together with Pascal Conte (former director of Tonnellerie Vernou – France) who, in 2003, realized a dream they had been working on for some time.
Descriptively, it is a barrel with a capacity ranging from 500 to 900 liters, which rotates on a central axis supported by rollers that, in some cases, support more than a ton of load.
It should be noted that Rutini Wines is the winery with the largest number of Roll Fermentors in the world, which shows, once again, that it is committed to quality and innovation in its products. History Mariano Di Paola’s constant trips to the wine regions of France allowed him to personally meet Pascal Conte who, at that time, was the director of Tonnellerie Vernou, a barrel factory that had been supplying barrels to Bodega Rutini for some time.
Talks and discussions about the uses of different oak styles led them to search for innovation.
Thus, after several sketches, designs and tests, they came up with what we know today as Roll Fermentor.
The initial objective was to create a tool that could provide the characteristics of wood during winemaking and whose technical operations would not be aggressive to the grapes.
These innovative devices are still being manufactured today, in different sizes and with different accessories.
What remains unchanged is their objective: excellence in the result. Benefits

  • Better integration of the oak into the must;
  • Progressive grain breakage;
  • Extraction of color and tannins in a softer way;
  • The optimization of time in the tasks since each turn (which takes only a couple of seconds) replaces the remounts or delestages performed in stainless steel tanks;
  • Elegance and balance in finished wines.
